Potato Salad

My daughter got married this weekend and it also being the 4th of July weekend I forgot to blog. So sorry its late but in honor of the holiday here is a fast and easy Potato Salad that is so yummy one spoonful won't be enough.

Potato Salad
4 cups cubed cooked potatoes
2 hard boiled eggs, chopped (I love hard boiled eggs so I used 4)
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup sweet relish
1 cup Miracle Whip
1 teaspoon prepared mustard
1/2 teaspoon celery seed
1/2 teaspoon salt
1/8 teaspoon pepper

Combine salad dressing, mustard, celery seed, salt and pepper. Mix well.
Add potatoes, eggs, onion, celery and relishes. Mix well again. Chill and then serve..

  2. Desirea, congratulations on your daughter's wedding!
    I love that recipe and use one much like it. A couple of possible alternatives from what I've learned from making it over the years. Use the waxy red potatoes as they hold their shape (I use one more than you do), mild yellow onions--they don't overwhelm the salad, 2 tsp wine vinegar, 2 tsp sugar, and I always chopped up whole, sweet gherkin pickles as opposed to using relish. Definitely use those 4 eggs--and Miracle Whip is key! So good!

  3. I also love potato salad which is strange because I didn't always. I am not sure why now I do. Sally I will have to try your version the next time I make it. That also sound yummy.
